What’s Different About Our No Gluten Pizza
As of January 2024, over 3.1 million Americans are estimated to be gluten-free. At Bucceto’s, we always set out to make sure every customer is taken care of, so we set out to develop the very best no gluten pizza we could. We wanted to approach our gluten-free pizza (and our gluten-free menu) with flavor in mind, so that our gluten-free customers don’t just have something they can eat, they have something they can crave.
What’s The Big Deal About Our No Gluten Pizza?
While developing our no gluten pizza, we knew our priority needed to be in the crust. This is where you’ll find gluten in a traditional pie, as traditional pizzas make use of traditional flour. We needed to find a substitute that was free of gluten, that held up against the sauce, cheese, and toppings, that had the right crunch and mouth feel, and that had the perfect pizza crust flavor.
What we found was that rice flour was our best option. Rice flour is simply very finely milled rice, creating a flour substitute that mimics the texture, taste, and stability of traditional wheat flours. In Asian cuisine, rice flour can often be found as a thickening agent in sauces or stews or used to make desserts thanks to its delightful texture and light flavor. By using rice flour, we were able to replicate our famous traditional pizza, and do so while keeping our pizzas safe for our gluten-free patrons.

One thing that surprises many of our customers is just how good our gluten-free pizza truly is. For those who are lovers of our traditional Bucceto’s pie, it’s difficult to distinguish between our standard flour pizza and our no-gluten option.
